How would I check my rear housing to see if it is bent?

Without a jig, I think the easiest way is to take your axles out.
If they slide in and out easily, it's most likely not bent

Check out CMG's website they have directions to a pretty good way

I read that and im thinking an 1/8 of an in. in 12 inches seems like its quite a bit. Am i wrong?

Any amount of bend is alot. Thats why if you can't pull the axles out and re-insert them with minimal effort, you need to have it straightened/replaced.
No need to go through all the extra measuring

For whatever reason all my axles are a bit tough going in and out, and i know my rear ends are straight, just my opinion but i like to be certain and measure
