Spark plug gap

We are changing spark plugs in both a sealed and open motor, both have the red boxes and coils.
We race on a 1/4 mile dirt track.
 What is the recommended gap for the NGO 6193 plug?
It seems that they are about .026 on each side now on both motors.
Would an open motor be gapped any different?  If so why?

I gap mine to .028 per my engine tuner's recommendation.
