I've been using Lucas SAE 80w-90 gear oil with excellent results, http://www.lucasoil.com/products/display_products.sd?iid=43&catid=4&loc=show .

I use Royal Purple, Max Gear 75-90. I have good luck with this. Any hypoid gear lube will work without troubles.

How much is the least amount of  lub you can use also the most.

One quart, I would not recommend any less.
